Tasting Notes: This expression offers an unmistakable combination of cooked agave, subtle oaky notes, citrus, and caramel. It presents the same full-bodied, buttery flavor found in the Blanco expression, with additional notes of grapefruit, citrus, black pepper, and spearmint. As it is exposed to oxygen, a wide range of fruity flavors emerges. The natural sweetness imparted by spring water and ripe agave is a hallmark of all General Gorostieta expressions. No glycerin, oak essence, colors, or other additives are present.
Agave is hand-picked at specific estates and the jima is carried out cutting of most of the leaves but keeping an inch or two, so the herbal aromas and flavors remain present after distillation. Once in the distillery, the cogollo is removed from the agave cores to avoid any flavor bitterness. The agave then is placed and slowly cooked with steam inside a brick oven at 96o Celsius for24 hours. After cooling down for an additional 24 hours, the cooked agave is now crushed and rehydrated with spring water by using a mechanical tahona, ensuring that all juice is carefully extracted without destroying the vegetal fibers, thus minimizing the presence of starch that releases methanol. Slowly fermented in stainless steel vats with natural yeast for 96 hours. Then, it is distilled in copper stills twice making sure the heart of the distillation is kept in its entirety and tails are disposed of, making sure no olive bitter flavors will ever come up. Although no heads are cut during distillation, the level of methanol and superior alcohols is way below the norm’s limits.
